Jackfruit seeds stir-fry recipe is super simple and quick preparation to make a delicious side option for your meals. You can prepare jackfruit seeds in various ways as adding them to curries, soups or simply munching them after boiling.

This recipe is great for vata balance and pitta balance and recommended in moderation for kapha imbalance as Diabetes, weight loss, PCOS and high cholesterol.

Jackfruit Seeds Stir-fry

Jackfruit seeds stir-fry is a easy and super delicious recipe that can be made in a jiffy. This recipe is recommended for kids, adults, new mothers, PCOS and for diabetics.

Equipment

Ingredients

  • 300 g Jackfruit Seeds
  • 2 cloves Garlic
  • 1 inch Fresh ginger root
  • 1 green chili optional
  • 1½ tsp Cumin Seeds
  • 2 tbsp Mustard Oil or any other pure oil as sesame, olive or ghee
  • 1½ tsp Rock Salt to taste
  • 1½ tsp Turmeric Powder
  • 1½ tsp Curry Powder optional
  • 1 pinch Asafetida or Hing

Instructions

Preparing the Jackfruit Seeds

  • Remove the thin white peel from the jackfruit seeds.

  • Now boil them in a pressure cooker with 2 whistles or in a slow cooker for 15 minutes.

  • Let the seeds cool down.
  • Once cold, cut them into small pieces as 1 seed into 4 pieces. Keep aside.

Preparing the stir-fry

  • Pound/chop ginger and garlic together.
  • Heat oil in a pan. Once the oil is hot, add in asafetida and cumin seeds.
  • Let the seeds crackle. Now add ginger and garlic.
  • Now break the chili into 2 parts with hand and add to the mix. Stir well. This will give flavour and not make the recipe spicy. Make sure to avoid touching your eyes or face.
  • Mix well and let it cook till the mix turns golden brown.
  • Add turmeric powder, salt and curry powder. Mix for few seconds.
  • Now add the cut jackfruit seeds and 1 tbsp water. Mix well and let it cook for 2-3 mins more. Cover.
  • Close the heat. Keep covered.
  • Serve with curry, Chapati or steamed rice. Enjoy!

Notes

  • Jackfruit seeds carry a thin peel like garlic on the top. It can easily be removed by first drying them a little. This peel cracks at some places and then easily be removed.
  • Some seeds crack open making it easier to peel with your fingernails, but others might need help with a knife. Be careful when you peel, the skin can be sharp, like hard plastic.
  • If you find some seeds do not have cracked peel, then you can use mortar and pestle to crack the peel open.
  • Make sure you peel them off before boiling as wet seeds are really hard to peel off due to this layer becoming slippery.
