This Zucchini recipe is a delicious and super nutritious preparation made from the popular gourd. Zucchini is highly versatile in nature when it comes to cooking.

It doesn’t carry any specific taste, hence easily blends with what you add it to. This recipe is made with herbs de Provence, a herbs mix made from popular herbs as Rosemary, Basil, and Thyme.

If you don’t have herbs de Provence, then feel free to make this recipe with either a single herb or what is available to you.

This recipe carries plenty of flavour and aroma from the herbs mix. It is crunchy in texture. And the best thing is that it balances all Dosha. Recommended for breakfast, dinner or lunch (side).

Zucchini stir-fry with Herbs de Provence

This is a simple yet delicious Zucchini recipe that can be turned around in a jiffy. It is savoured by kids and adults alike. Add it to your meals for Nutrition and Flavour.

Equipment

  • Heavy Bottom Pan or Pot

Ingredients

  • 3 Medium Zucchini about 700 g
  • 2 Garlic Cloves
  • 1 tsp Rock Salt To taste
  • 3 tsp Herbs de Provence mix Or use oregano only
  • ½ tsp Black Pepper Freshly ground for garnishing
  • 1 tbsp Olive Oil Or any pure cooking oil
  • 1 Medium Onion optional

Instructions

Cutting and preparing the vegetables

  • Soak the Zucchini in salt/soda water for about 15 mins to remove the chemicals. Wash well and then cut into small – 1 inch pieces. You can peel it if you want, however it is better to retain the peel for better nutritional value.
  • Finely chop onion and garlic.

Cooking the Vegetables

  • Heat the pan on medium and add oil.
  • Once the oil is hot, add in the onion and garlic mix. Stir till it turns golden brown.
  • Now add Zucchini and herbs de Provence.
  • Mix well, cover, and let the veggies cook for another 5-7 mins.
  • Check whether Zucchini has turned soft. Close the heat and keep covered.
  • Sprinkle with salt and pepper and serve with your meals. Enjoy!

Notes

We added salt in the end to prevent the veggies from releasing moisture.
